homemade lamb stew

This was so amazingly good and simple. Toss it all in the slow cooker (withholding the beans, the leafy part of the cilantro, and half of the chard) and let it simmer for a few hours. Once the meat is cooked through add the remaining ingredients and let simmer for an additional 30 minutes. You’re done!

The best part? I got all the ingredients delivered to my door in my Imperfect Produce order! It doesn’t get easier than this meal folks.

INGREDIENTS:

  • 1lb lamb stew cut or cut shank into cubes

  • 1 bunch rainbow chard cut into a large dice

  • 1 bunch cilantro chopped, separate stalks and leafy parts into two piles

  • 2 cups bone broth

  • (2) 13 oz boxes of borlotti beans

  • 1/2 an onion, diced

  • 3 garlic cloves, minced

  • 3 TBSP EVOO

  • 2 tsp paprika

  • 1 tsp smoky paprika

  • salt and pepper generously
